So, what’s on my mind this morning?
If we were having coffee this morning, I would tell you… that I actually don’t drink coffee. Although I love the smell, I cannot stand the taste. Nor what it does to my body (I’m a little caffeine sensitive). The only time I enjoy coffee is if I’m having a cappuccino after dinner with a delicious chocolate dessert. But even then, it’s only a few sips! I do enjoy tea however. Especially the kind with steamed milk (hello Chai Tea Latte!). And especially if the milk is non-dairy (hello Almond Milk Chai Tea Latte!).

If we were having coffee this morning, I would tell you…. that this is the earliest I have been up on a Saturday in awhile. Although I usually start tossing and turning before 6 (when I normally get up for work), I actually felt well rested and got out of bed by 7 this morning. Must have been because I feel asleep on the couch around 10 last night while watching the Wild play. That was my strategy all week for the them winning, but it obviously didn’t work last night!
If we were having coffee this morning, I would tell you…. that I have been super busy lately! Between planning a wedding, house hunting, food truck researching, teaching (of the school and yoga kind!), and my coaching duties, life has been nuts! However, I can honestly say I wouldn’t want it any other way. Every opportunity is something to be grateful for. This weekend, however, is the first weekend where I literally have nothing going on. And boy does it feel good.
If we were having coffee this morning, I would tell you…. about how sick everyone around me has been! A few weeks ago I had a bad cold, the fiancé was sick all this week, and a lot of my co-workers and students are sick too. We have been loading up on the vitamins at our house (these are our go to favorite!), and making and eating delicious soup. Like this light version of Chicken Wild Rice soup.
If we were having coffee this morning, I would tell you…. that there are only 5 weeks of school left. It’s crazy to think that another end to the school year is upon us. I’ve enjoyed this year more than last, for a reason I can’t quite put my finger on. I love my students and always have, but something has just felt different (and better!) this year. Maybe it’s because I’m in my fourth year, and am finally hitting my teaching stride.
If we were having coffee this morning, I would tell you…. that the fiancé and I are having date night tonight. Mexican style. I used to hate Mexican food, but I think it was just that I had never had real Mexican food. You know, the un-American version that includes lots of seafood and not so much dairy. We tried this new place in Minneapolis this winter, and loved it. Were hoping to go back tonight.
If we were having coffee this morning, I would tell you…. that my allergies have been pretty much non-existent this spring (I’m hoping I’m not going to jinx myself by saying that!). The sinus pressure, headaches, and fogginess have been no where to be found. Although I no longer drink milk (which I think helps), I also am eating very limited amounts of gluten. I had heard about the link to gluten and allergies before, but never really believed it until now. Even last Fall when I was first trying the gluten-free business out, my allergies had been better than they had in the past.
If we were having coffee this morning, I would tell you…. that I am back on the juicing train. The fiancé and I received our juicer as a Christmas gift, and were off to a great start. Then, the end of winter was extremely busy, and I just couldn’t seem to find the time. Last night I juiced what I had in the fridge: 1/2 pineapple, 1 pear, 4 carrots, 3 kale leaves, 3 beets, and 2 celery stalks. It turned out delicious. And ridiculously pretty! I’m enjoying the extra glass this morning.
If we were having coffee this morning, I would tell you…. how excited I am that the sun is out this morning. After an entire week of heavy rain, it’s about darn time. I’m looking forward to getting outside for a run or walk and soaking it all in.
