Homemade Margarita Mix

Hey there everyone.

Happy Hump Day. The last time we met was during this past Saturday’s Ultimate Coffee Date. I had a lot of fun writing the post, and hope you enjoyed it yourself!

We did end up making it to La Fresca Saturday night, and it was just as delicious as it was the first time. I had this Poblano pepper stuffed with ground beef, boiled egg, and olives. Topped with pickled onions and a tomato relish. Sounds strange – but it was surprisingly very very good! The owner has two other restaurants, so I’m thinking we’ll have to try them out sometime.

On Sunday, I attended a little Cinco (well technically cuatro) de Mayo celebration with friends. The host made carnitas, and everyone brought something to share. Because I decided to attend the day of, I didn’t have time to run to the store beforehand, and thus had to use what I had in the house. I decided on a good ‘ol standby, beans and rice. Pinto beans, rice, cumin, chili powder, cayenne, smoked paprika, garlic, jalapeño, green onions. Wasn’t too shabby for being it was last minute.

On Cinco de Mayo itself, the fiancé and I made tacos. Grilled peppers, onions, steak, and homemade tortillas (with the fiancé’s famous homemade guac!). Apparently I couldn’t get enough of the Mexican food!

I also made these yummy Margaritas. Margarita mix at restaurants (unless it’s also made by scratch) freaks me out. It’s got this strange glowing green color to it, and just tastes a little too artificial if you ask me. This mix is easy, and made with all natural ingredients.

Easy Homemade Margarita Mix

Ingredients

3 limes

2 oranges

3 tsp Agave syrup

salt (optional)

lime wedges (optional)

your favorite tequila

Directions:

Squeeze limes and oranges into a small pitcher.

Add in Agave syrup.

Stir to combine.

Using a lime wedge, run it along the edge of the glass. Fill a small plate with a thin layer of salt. Place glass rim-side down on salt and lightly press down and twist until edge is coated.

Fill glass with ice. Pour in tequila (about 1/4 cup – or more depending on how strong you like it!)

Pour margarita mix over.

Enjoy!

Notes:

You can also use a small cocktail mixer and add the tequila into the mix, if you’ve got one.

Consider doubling, tripling (or quadrupling!) this mix to share with others. Ours made just enough for two small margaritas.

If you like your margarita a little sweeter consider adding more agave, a little bit at a time, until it suits you!

I used to think ‘What I Ate’ posts were a bit on bragging side (Do you really care what I ate for every meal today?), but then I realized they’re a really good way to get some new meal and snack ideas. It’s actually a pretty cool idea (the why-didn’t-I-start-this-earlier kind of cool!). And besides, it’s fun to get a glimpse into other people’s lives. Isn’t that what blogging is all about?! :)

Unfortunately, I think I might have caught whatever the fiancé (and a few of my coworkers!) have/had. So today has been a little odd in terms of what I have eaten. “Starve a flu, feed a cold”, right? That’s probably not sound medical advice, but honestly, I don’t usually have much of an appetite when I’m sick. So, here’s my ‘What I Ate Wednesday’, anyway.

Breakfast: Peanut Butter Banana Smoothie (with cocoa nibs and chia seeds). My new favorite. It gives me an excuse to eat something chocolaty in the morning, while still being healthy! Stay tuned for the recipe.

Don’t worry, I’m not driving yet. 

Lunch: Alright, my lunch today was pathetic. An orange (not pictured – because I ate it before I realized I should have taken a picture!), and some celery with PB. Literally that’s all I could find in the house this morning before I left for work. And like I mentioned before, I didn’t have much of an appetite.

 Yes, I was eating off a paper towel at work. Classy, I know.

Snack: Carrots on the way home from work. These are my favorite. I buy them in the 32 oz. size, as we tend to go through a lot of these between the two of us!

When I got home from work I took a nap, and then took a nice long bath. Anything to make me feel better! After my nap I had a handful of tortilla chips (Que Pasa Organic – not pictured). No salsa, which was a huge bummer! Chips and salsa is literally one of my favorite snacks.

Dinner: Then the fiancé brought my home chicken noodle soup from the place down the street, Yum. No literally, the cafe is called Yum. :)

Delicious all-natural margarita mix!
Ingredients
  • 3 limes
  • 2 oranges
